Who is Edward Mair?
With more than 20 years of experience leading kitchens in Europe, the Middle East, and Asia, the Scottish-born chef brings an exceptional combination of classical training, creative innovation, and deep appreciation for local flavours. His career spans Michelin-recommended venues, luxury hotel openings, and large-scale events catering for more than 1,500 guests.
Known for his precision, leadership, and artistic flair, Chef Mair has curated menus that resonate emotionally while demonstrating technical excellence. His global journey has taken him through some of the world’s most renowned culinary destinations, where he has developed a reputation for enhancing kitchen culture and delivering immersive dining experiences.
What will he oversee?
At Sofitel Dubai Downtown, Chef Mair will lead an extensive portfolio, including restaurants, lounges, in-room dining, and banqueting. His vision is to fuse French savoir-faire with the vibrant, multicultural energy of Downtown Dubai.
